Food trucks offer a variety of options

A couple of new food options have rolled into Fayette this spring. 

Wrap It Up and Fat Man’s Chicken & Fish Shack are offering a variety of menu items for lunch on Tuesdays and Thursdays at the south end of the courthouse square. 

Aletha and Larry Norvell began serving healthy meal alternatives from the Wrap It Up food truck service in March. The truck has serviced locations from Jefferson City to Columbia to Boonville over the past two and a half months. 

The statewide response to the coronavirus pandemic eliminated some of the festivals and events on which the new business was counting for revenue and exposure. Those circumstances led the Norvells to look for new locations to supply.

Their daughter and food truck assistant, Jennifer Graen, is a resident of Fayette, so it was a natural area to make a trial run. The support on May 19 was encouraging and the truck has returned every Tuesday since. Larry Norvell is the grill cook for the truck, which serves hoagies, wraps, bowls, sides, and desserts. 

The menu includes:

Hoagies: Phillyup (with steak or chicken), Meatball, Mamma Mia (with salami, smoked ham, and pepperoni), and a Pork Tenderloin Sandwich. 

Wraps or Bowls: China Grill (grilled chicken with Chinese noodles and Asian dressing), Mahalo (grilled chicken and ham with pineapple sauce), Tiptoe thru the Garden (with greens, veggies, apples and avocado spread).

Michael Anderson also began his business this year. Fat Man’s Chicken & Fish Shack services Glasgow and Marshall on Fridays and Saturdays. The truck sets up on the square in Fayette around 11 a.m. every Thursday. 

“I’m originally out of Glasgow, so I was familiar with Fayette,” Anderson said. “I live in Marshall, so I just started with those three places. They’re fairly close and I know quite a few people in each town.”

All of the entrees are served with fries. The menu items include: fish, wings, cheeseburgers, Philly steak & cheese, chicken sandwich, shrimp basket, pulled pork, chubby steak or chicken burrito, and a chicken or steak quesadilla. 

Anderson’s personal favorites include the Philly steak and cheese and the catfish. Business has been good in Fayette and sometimes many of the items are sold out before 2 p.m. 

“Things are going good,” Anderson said. “I love the community of Fayette, they’re very supportive and we love being here.”
